Cookie Confession

Today, I have been finishing up some baking and again I am reminded that for some reason, I cannot bake cookies. I can bake a pie, a cake , cupcakes and a great apple crisp, but give me a cookie recipe and I will mess it up. I even mess up the pre-made dough that you buy at the store. It's a tough thing to be so bad at cookies when you live with two boys who LOVE cookies and ask for them often. They are both good sports (especially Ryan) and will eat them. I will never make cookies for my neighbors at Christmas because what if the Relief Society President found out my cookie secret. Anyway, this morning, Braxton and I made sugar cookies. Half of them are not edible, but we had fun with the cookie cutters and decorating the cookies. Someday when Braxton decides to get married, I am going to make sure she is a good cookie maker so that my grandchildren do not have to suffer like their father and grandfather did.

I'm sure they are not that bad!! I think I am a good cookie maker I must say, but cookies are tricky. They are either really good, or I screw them up. The 2 tricks to cookies are....1.Don't overbake. Take them out when the sides are a light brown. Even if the middle is not totally done. They will finish cooking on your cooling rack. Otherwise they are too crispy and brown. 2. Use a shortening/butter combo. If it calls for 1 cup of butter (like on the toll house recipe) then use 1/2 cup of butter and 1/2 cup of shortening. IT will make it much better. Too much butter will flatten the cookie. See if that helps. It will make it taste better also

Don't feel bad - a year can't go bye without my family teasing me about my lemon "soup" pie..... I seem to mess up just about everything I try to make - ha ha ha - but it still tastes good - isn't that want matters?
